What do you think of a Dark Souls-esque health system in an open-world sandbox game?

I was tired of healing being nothing more than hoarding thousands of health potions or bandages, while doing nothing during combat other than hitting the heal button or maybe waiting for a cooldown to apply more healing.

So I tried to implement a Souls-like healing system where you only have a fixed amount of healing ability between 2 rests. The capacity and amount are upgradeable with progression, but you can’t hoard it.

Do you think it could work? What would be the downside?

The appearance of the in-game UI, the small crystals show the strength, the large blocky ones the remaining charges
